4 Easy Pumpkin Dessert Recipes (Skip The Icky Spices!)

Are you Craving Pumpkin Flavored EVERYthing this time of Year?

pumpkin halloween fall autumn illustrationI am… and I’m not. I’m always tempted by pumpkin pie milkshakes and pumpkin pie hot chocolate drinks. But every time I try one I’m so disappointed by how overwhelming the spices are in the drinks!

WHY? Why do they do that?

I don’t like nutmeg at all and allspice is just yucky. Why do they overdo the spices in yummy store-bought pumpkin desserts and drinks?

Here’s my solution. DON’T overdo the pumpkin pie spices. Cinnamon is great but whatever the recipe calls for on the other spices, just add a pinch or even skip them. I can’t help you on store-bought. But when you are making your own desserts or inventing your own drinks, keep the spices to a minimum and you might like pumpkin desserts after all! Ignore the recipes where they say 1 teaspoon of pumpkin pie spice. Add a pinch and then add ½ or more of a teaspoon of cinnamon.

Here are 3 easy pumpkin recipes (go easy on the spices!).

Pumpkin Mini Cheesecake Bites W/ Ginger Snap Crust

This might look hard but I swear it’s super easy!

INGREDIENTS

  • 1 17.5 oz Pouch Ginger Snap Cookie Mix (and ingredients called for on the back—See tip below)
  • 2 Packages 8 oz Cream Cheese (softened)
  • ¾ Cup Sugar
  • 2 T flour
  • 2 Eggs
  • 1 teaspoon vanilla
  • 1 Cup Canned Pumpkin
  • Tiny Pinch of Pumpkin Pie Spice (Or skip it—I won’t tell!)
  • ¾ teaspoon Cinnamon

DIRECTIONS

COOKIE CRUST

Mix the cookies according to the instructions on back, using cupcake liners add about a Tablespoon of cookie dough into 24 cups with the remaining dough form 5 or 6 cookies on a cookie pan. Cook the cookies at 350 about 7 or 8 minutes. Let cool. In the mean time press the cookie crust mixture down into the cups. If there is dough leftover add more to the cups.

NO ONE EVER complained there was too much cookie crust!

Now you choose (I’ve done it both ways). You can cook the cookie crust at 350 degrees for a few minutes 3-5 and then add the filling. But I think I prefer just cooking it all at the same time. The crust is still cooked and I liked it better.

PUMPKIN FILLING

Beat cream cheese, sugar, flour until creamy. Then add eggs and vanilla and beat till well incorporated. Add rest of ingredients and beat until smooth.

Use a small scoop to place filling into the cookie crust about 2 Tablespoons. Or just less than full.

Cook at 350 degrees for 15-20 minutes or until set. They always say don’t overbake cheesecake, but sometimes I find the top cracks and it always tastes fine to me! So don’t stress about it. If it’s not giggly in the middle it’s done.

Then crumble the cookies over the top at the end. Everyone will love you. And love that you didn’t overdo the DANG SPICES!

Pumpkin Chocolate Chip Bread

I just substitute canned Pumpkin for bananas in my favorite Banana Bread Recipe and add a big handful of chocolate chips at the end. Add a pinch of pumpkin pie spice and ½ teaspoon of cinnamon. If you already have a banana bread recipe, try it!

If not, my healthy banana bread recipe is over HERE. Skip the healthy stuff if you want, but honestly you won’t know there’s healthy stuff in there. And then you can add as much butter to the end product as you want!

I have to confess I just used the recipe straight off Pioneer Woman’s site. Go there and follow her recipe. These are like having pumpkin pie for breakfast! And a new tradition was born at my house. We plan to have these each year for Conference Weekend (you can read what I mean by that here).
