Shepard’s Pie

A Mom Story
Once upon a time there was a mom who was tired. She spent her mornings cleaning and laundering. She worked a few hours online teaching the tricks and trades of the internet to the small companies in need. She worked out at the gym when she could fit it in (and she pretended it was enough).

She spent her afternoons running willy nilly. Picking up kid the 2nd and the 3rd, and then running back for kid numero uno. This one needed new cleats for softball. That one had to be rushed off to T-Ball. Homework in the car. And her loving husband; while happy to help out with all the running to and fro… was out of town that week.

And watching little league in the freezing hail/rain/snow of the spring that wasn’t, was taking a toll.

When it came time for dinner, there was only one thing to do.

Use the Sunday leftovers, and whip up a one dish wonder.

Shepard’s Pie

  • Hamburger, browned
  • Tomato Soup, campbell’s
  • Green Beans, from a can
  • Potatoes, mashed
  • Cheese, A LOT

Layer upwards in that order. Bake til heated through, 350°.

Eat around 9PM with children in pajamas.
Hot cocoa nearby.
Go sit in hot tub.

The End.

Eating dinner in my pj’s sounds like a great way to end a busy day. And hot chocolate and a bath? Heaven!
