Hamburger Taco Meat LEFTOVERS – Ideas

I need some new ideas for Taco Meat Leftovers?

We’re stuck in the leftover carousel, round and round we go. Making the same things over and over. Does this happen to you? The same 10 meals month after month? BORRR-ing.

We are in sad taco mode. Please save us!

Here’s what Google thinks:

• Save the meat for the morning and use in Mexi-Omelets, or breakfast tacos.

• Make a fast and easy crock pot chilli.

• Layer up in a Taco Lasagna. And a second idea for Mexican Lasagne!

OR

• Tamale Pie
• How about appetizers for dinner, create giant Nachos!
• Easy Cheese Sauce and Meat Dip

• How about Taco Salad with a crunch?!

I finally settled on…

• Tater Tot Taco Casserole

This had me stumped. I saw a recommendation somewhere for this but no real recipe… so I made one up!

First the Tater Tot Layer:

I baked them first so they would stay a little crispier longer.

Then the Meat Layer:

• Leftover hamburger seasoned taco meat. (Mine has onions cooked in it)
• 1/2 can black beans
• Small can green chilies
• 15oz can petite chopped tomatoes (drained a bit first)
• 1/2 cup salsa

Warm the whole mixture in a skillet over medium-high heat. Then spread over the Tater Tots.

And of course the CHEESE Layer:

Grab a big handful of whatever shredded cheese you have on hand.  I had mild cheddar.

Basically warm up in the oven until the cheese is melted, everything else is already cooked.

Serve with lettuce/tomato/sour cream/salsa/ranch… !

My kiddos loved it!
