Strawberry Bread | Recipe With Spring Berries!

I love making this sweet bread with fresh Strawberries, but it can be made with frozen as well.

Strawberry Bread Recipe

  • 5 tablespoons plus 1 teaspoon unsalted butter, softened, plus more for pan
  • 1 pint strawberries, rinsed, hulled, quartered, and mashed with a fork
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 2 large eggs

I don’t change much except I like more cinnamon so I use a full teaspoon and I use mini loaf pans because I can never get full size loaf pans to cook all the way through without burning the outside. The recipe made 3 mini loaf pans and several muffins. You could use half whole wheat flour as well if you want a bit more of a whole grain punch.

You cook the fresh strawberries down in a saucepan first for a few minutes until they are about the texture of a sloppy jam. And then I let the strawberries cool for a while before I start making the batter. I only sprayed my pans with a cooking spray and that was enough after cooked for the loaves to pop out of the pans.

Try eating with cream cheese like suggested I was skeptical but it was really yummy. I still like butter on them as well! Warm out of the oven is wonderful but the kids also love these in their school lunches.

    I think I’m going to attempt a gluten-free version of this as well because my daughter loves strawberries and bread. So, why not combine the two? Thanks for sharing the recipe! Love the Mother’s Day pics.

    I’m SO trying this recipe, right after we make it out to our local strawberry farm! These sound delicious. And I may be partial but I will eat cream cheese on ANYTHING! 🙂
