This is my Grandmother’s Zucchini Apple Pie Recipe

My favorite way to make this pie is in a pretty pie dish, like this Stoneware Pie Pan coated with enamel!

Ingredients:

  • 5 C. Zucchini – peeled, seeded and cut into apple sized slices
    (The bigger the zucchini the better, ask your neighbors for their ‘forgotten giant Zucchini’!)

Boil zucchini for 2 minutes, drain and set aside to cool.

Mix together:

  • 1 C. sugar
  • 1/4 C. Brown sugar
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Allspice
  • 1 1/2 teaspoon Cream of tartar
  • 2 Tablespoons Flour
  • pinch Salt

Gently stir dry ingredients into boiled zucchini in a large bowl.

Pour into a store bought pie crust (as long as we’re faking it, let’s really go to town!).
Then cover with a 2nd store bought pie crust.

 

Bake at 400 degrees F. 15-20 minutes, then turn down to 350 degrees F. for another 15-20 minutes. Cover the crust edges with a pie cover or tin foil if they start to brown too much.
